Ingredients
- 2 skinless salmon fillets
- 1 tbsp soy sauce
- Grated zest and juice of 1 lime
- Pepper
- For the chickpeas – 2tbsp olive oil
- 2 cans of chick peas
- 2 minced garlic gloves
- Grated zest and juice 1 lime
- 150mil vegetable stock
- 150g bag of spinach
Instructions
Combine soy sauceand lime juice with Salmon fillets and let it marinate while you preparing chickpeas.
Preaheat oven to 190C/170C fan/gas
Tip the chickpeas into a colander, rinse well under cold running water, then drain.
Heat the oil in a pan, add the garlic, then gently cook for 5 mins without browning.
Add the chickpeas,vegetable stock,1 whole grated lime zest and juice from 1/2 lime.
Tip it all in to the oven proof dish, place the salmon fillets on top of chickpeas.
Brush the salmon lightly with oil, sprinke some more lime zest and pepper.
Bake for 12-15min untill the salmon is cooked.
Lift the salmon off and keep warm.
Crush the chickpeas lightly with a potato masher, then add the spinach and stir well until the leaves are wilted.
Add the remaining 1/2 lime juice and some salt and pepper, then heat through.
Serve with the salmon.
